Welcome. Deronda here with foods 101. Today, I’m going to show you how to make this Dark Chocolate Cranberry Oat Bars. Absolutely fantastic. What you’re going to need to make this is one and a half cups of quick one-minute oatmeal, one and a half cups of all-purpose flour, one and a half cups of lightly packed brown sugar, 1/4 cup of orange juice, 1 teaspoon baking powder, 1/2 teaspoon of salt, 1/2 cup of chopped walnuts, if you want to use pecans or pistachios or whatever other nut you want to use you be my guest, 1 cup of chopped dried cranberries, I’m using a cranberry that’s been infused with blueberries, but you can use whatever dried cranberry you like, 1/2 cup of dark chocolate chips, then again you can substitute this with milk chocolate chips or white chocolate chip, two eggs, and one and a half cups of butter at room temperature. First we’re going to take this orange juice and we’re going to pour it over our dried cranberries. Push these cranberries right down into that orange juice as you can see. We’re gonna microwave this for 30 seconds. While those cranberries are soaking in their orange juice. I’m going to go ahead and add the oats, flour, salt, and baking into a medium bowl. We’re gonna toss these four ingredients until they’re well combine. It’s just gonna take a few seconds. That looks fantastic. Set this off to the side. In a larger bowl I’ve been adding my room-temperature butter and you see how soft that is. That’s what you’re looking for. Add your brown sugar. With the mixer beat until light and fluffy. After a minute we’re going to add 1 egg at a time. I like putting my eggs in a measuring cup. Be sure to scrape down the sides of your bowl. Beat for 1 minute. Add your second egg and beat for one additional minute. That looks perfect. Add your flour and oatmeal mixture. Give these ingredients a lovely stirring until your dry ingredients is mixed well with your wet ingredients. Tme to add those dried cranberries soaked in orange juice. These smell magnificent. Add your walnut and dark chocolate chips. We’re going to stir these until they’re well combined. Oh my goodness and at this time you want your oven preheated to 350 degrees Fahrenheit. I’m using a 13 by 9 inch baking dish. That’s lightly sprayed with cooking oil. Adding our Chocolate Cranberry Oat Bar mixture right in to this baking pan. Push it from corner to corner until you have an even layer. Off to that preheated oven, on the middle rack, for the next 25 to 30 minutes. Use your timer and no peeking. Baked Chocolate Cranberry Oat Bars. Oh my goodness. My whole kitchen smells fabulous. To make sure these have completely baked I do the old toothpick test. Put it in there. If that toothpick came out with better on it. We’d put it back in the oven for the next three to five minutes. This is perfect. We’ll test here in this area. Comes out SuperDuper clean. I’ve had my Chocolate Cranberry Bars cooling for about two hours at room temperature. If you want to Speed up the process. Just go ahead and put them in your refrigerator. Like you know, that first piece is always the hardest slice to get out. I’m just gonna use a spatula. Look at this. They’re still a little warm and crumbly. Yum. Look at those chocolate chips, and those walnuts. Wow. Smells delicious. I can smell the cranberries. I’ve got to give this a try. It’s still a little warm. I don’t let it cool down completely. Here goes. Mmm, those dark chocolate chips came through immediately with that dried cranberry flavor, and walnuts. That oatmeal makes it so nice chewy and moist. YUM. Delicious. Those walnuts, cranberries, and chocolate chips are perfect combination together. I’m Deronda with Foods101. Leave me a comment. Give me thumbs up.
