To score beef, you first want to take your
beef and lay it horizontally across the cutting board with your grain going horizontally.
You want to take your paring knife or whatever knife you use, and you’re going to cut across
the grain here and we’re just going to make little cuts across the grain like so and what
the cuts will do will help the steak from curling when you cook it under high heat.
