soak for 15 minutes with salt and wash eggplant and coriander leaves with fresh water. Grind following ingredients in a mixie jar to smooth paste. Coriander leaves,cumin seeds,salt,green chillies & ginger Eggplant Half slit them lengthwise as shown here. Through out cooking maintain on low heat and with lid on. Heat oil in a curry pan over low heat add mustard seeds wait till crackle. Add eggplants and coriander paste. Sauté well.Gently flip the eggplants to the other side during the cooking process.
