Today I am showing you how to make some colourful
amazing rainbow cupcakes. Hello everyone it is becky here welcome to
my virgin kitchen and it is my first official day of working at my virgin kitchen this is
my house it is a bit weird I do not have to put on a work uniform I have thrown out my
work shoes I cannot stand I have thrown out my t shirts which were on their last legs
but yeah this is it my very first day so yeah we are making not your basic vanilla sponge
or chocolate sponge like done before we are stepping it up and making some exciting rainbow
cupcakes. The first step we are going to do today is
make our cake batter and I am very excited because I know I go on about it the last few
videos quite a bit but I am going to use, ta da! My stand mixer, so this is how we are going
to do it. What is the matter, I keep forgetting it sticks
to the side and try to lift it up it is heavy, here it is my beloved stand mixer, now barry
keeps saying it needs a name but I am not sure, I really want you to call it alan or
bob, alan or bob maybe bob, not alan, nothing wrong with the name alan by the way, maybe
bob, the stand mixer, maybe suzie the stand mixer there we go. Keep it female suzie the stand mixer, anyway
if you have not got one of these, do not worry you can still do this recipe you can use an
electric hand whisk, or spatula, wooden spoon, but I think I have done my fair share of mixing
in the last few videos of making cakes and I did get pretty sore arms so going to be
lazy today and use the stand mixer, stand mixer is up and ready for action, first step
pour in the flour that is self raising flour that has gone in there folks just remember
the full ingredients and one thousand other recipe videos must be over one thousand now
as I keep saying one thousand one thousand one hundred recipes are available at the myvirginkitchen
website. In goes the sugar, in goes the butter, now
we crack in four eggs one at a time, if you could crack 4 eggs at once I would be impressed
that would be impressive oh slow motion there, one, three, I love how I am still counting
even though I have the right amount out in front of me, today we are going to learn how
to count to 4. Making sure I use the right one today, 1 tablespoon
of vanilla?! That would be lovely, well better than a tablespoon
of baking powder yeah cake still turned out alright though managed to get it out, we did,
just going to use half a teaspoon of vanilla extract. I cannot say what barry just said right sally
is full and ready to go all the ingredients are in the bowl and now it is time to get
mixing, down she goes, it is getting there almost ready, even with the stand mixer you
do need to check the sides with bits of ingredients on the side of the bowl I am just going to
scrape it down with a spatula that batter is looking really good now but just like in
the other videos I am going to add 2 tablespoons of milk just so we get a good consistency
where it is dropping off the spoon and now give it a little bit more of a mix. Our batter is done it is looking all nice
and smooth now for the exciting bit we get to mix the colours, so all I am going to do
now is evenly divide this cake batter between four bowls because we are going to use four
different colours today we are going to use pink green yellow and blue but it is entirely
up to you mix it up if you want use three colours, two maybe even five if feeling brave. If you want to be really accurate about this
you could put bowls on scales and weigh out the cake batter to make it even but I am just
going to use my eyes and just guess it to make sure it is going to look about right,
why did you put the spoons in the bowls? To help you, that is very helpful but I do
not need them in there just yet, thanks though. Our 4 bowls are ready our colours are ready
and I have some clean spoons ready because we do not want any colours mixed like pink
and green or anything like that so we use separate clean spoons when mixing together,
oh that is looking good, so we add a little bit at a time, just to check and get the right
colour so that is a pale pink, but I want this to be a nice bright pink so add some
more I am really happy with that colour pink do remember when mixing to get right down
to the bottom of the bowl to make sure there is no food colouring lurking in the bottom
and that it is all mixed in well. We can now move on to our next three colours. And you can even get an assistant in to help
you like me, hi, thanks for coming back, I live here it is what I do, I have no choice,
so our colours are ready so our colours are ready we have pink, green, yellow, just checking
you are keeping up with me, and blue. And now they are ready to go in the cake cases,
this is exciting. There are lots of different ways to get a
rainbow effect with cupcakes and I will show you two different effects today I am going
to show you one that is a layered rainbow cake and the other is going to be more of
a marble effect, so lets get them in. If you did just want to make a rainbow cake
you would scale up these ingredients doing it the same way but hopefully I will show
you that one day. First one we are going to do is our marble
effect so we just take a small amount of cake batter from one of your colours, and just
spoon it, into your cake case then get your next colour, then spoon it in next to it,
oh wow look at that we have our 4 colours look a bit like one of the everlasting gobstoppers
from the willy wonka film it does then you can just double it up, I just did a small
amount to begin with as I was not sure how much would fit in the cake case, but I still
have some space so will add in a bit more, just keep adding the batter a teaspoon at
a time, now to get that tie dye effect I am just going to use a cocktail stick to very
gently swirl the cake mixture together so there we go that method is done. Our next one we do our layered cake batter
so first we do pink the green, yellow and blue on top, lets go. Be a little more generous this time as we
want a good layer of cake batter on remember once you put one layer in you cannot top it
up, green goes next, be sure to gently spread the layer out, be careful not to mingle the
colours together, yellow is next, blue. These are looking really good now, super colourful
I am loving them, we did get a bit carried away with one did some sort of funky design
but other than that they are now ready to go in the oven, these are going in the oven
now on the middle shelf for 20 minutes until a toothpick goes in the middle and comes out
clean. So for out buttercream, hang on the dogs are
walking around, she is fine so for our buttercream filling we need, room temperature butter,
icing sugar or confectioner sugar and some vanilla extract, I am also going to drop in
a few tablespoons of milk if it needs lubricating. In goes our icing sugar, one big puff of smoke
and in goes our butter, I have half a teaspoon of vanilla extract, and finally a tablespoon
of milk to loosen it up and now it is time to let sally do the work, the plug is not
turned on, what? The power is not turned on at the wall, better
go turn it on then, quick, lets do that again, helps if you turn the power on, I thought
you did that you plugged it in for me, here we go. I just checked my cupcakes and they are almost
done they are looking so good now remember with this you want to keep going until you
have a nice smooth consistent mixture. Wow that is looking good we can now transfer
it to a piping bag and pipe onto our cakes. Speaking of which lets get them out of the
oven they are out of the oven and done and looking so good, there are 2 we overfilled
a little so when doing it fill about 2 thirds of the way they are spilling out the edges
but hey this is my first time doing it. Not that it is a mistake just that someone
is going to be very lucky and get one big cupcake, all I am doing now is transferring
the cakes to a wire rack to cool down. So here we go here is cake number one look
at that you can see all the colourful layers, I can see the pink the green, yellow and blue
that is looking amazing really colourful. And here is the second one look at this, you
can see all the colours around the outside and the top is like a marble tie dye effect
and I love that effect on the top it looks so colourful. The cakes are nice and cooled and ready for
icing but look at this we have a tie dye cupcake wrapper very cool. So I am a bit of a novice at this I have not
really decorated many cakes, but the only way I am going to get better is by practicing
so here goes and remember if I can do this anyone can I just want to inspire you guys
to have a go, look at that, its awesome I like that, do not do any more icing ever again
quit while you are ahead, now do this one lets try again and for extra colour we have
a little pot of hundreds and thousands to sprinkle on top
wow these are really really good, the girls are going to love these when they come home
if there is any left. There we go then that is how we make those

  2. I made these cupcakes before. They would burn so easily. I cried and cried over each batch that burnt. I couldn't figure out what was happening! 350f for 10 minutes and they come out black and raw in the middle. It was so frustrating! A month or so down the road I learned that the thermostat on the oven was broken. It read 350 but was really on 500f!

  3. 3:15– mixer starts to speed up. One abrupt cut later at 3:17 and the mixer is slower and there's flower all over the table. πŸ˜‰

  4. I think when they say to add the eggs one at it time, they mean cream the butter and sugar together, then add one egg, then mix until combined, then add another, mix until combined, etc. At least that is how all of the recipes I follow describe it as.

  5. Next time, squeeze the piping bag from the bottom & hold the bag at the top, you'll have more control. Also, don't fill the piping bag so full, do it about halfway & it will be a lot easier to handle. [:

  14. Tip: use a piping bag to pipe the cake batter colors in the cupcake tins, you can use a ziplock bag as a piping bag if you just cut a tip off.

  16. When I make rainbow cupcakes instead of using cupcake liners I put the batter in flat bottom ice-cream cones and once they are cooked decorate them like an ice-cream. Kids love them.

  18. tip for piping icing on cakes not that anything was wrong with urs but to make it easier for yourself is to pipe from above not at an angle. makes it way easier and gives a better finish. ☺
