Today we will be doing Chicken Biriyani – Please note down the ingredients soak the mixture of 750 grams of chicken has been marinated with Red Chilli Powder, Coriander Powder,Turmeric, Garam Masala, curd, salt, ginger garlic paste for 1 hour basmati rice clensed and soaked in water for 30 minutes Let’s start cooking I will be showing you Cooking Biriyani using cooker today Place the cooker on the stove, with medium flame Add some ghee in the cooker Add some oil now For biriyani, lot of oil should be used. let the oil boil add Cinnamon, Cloves, Green Cardamom add the onion now, i have used 6 onions here. adding more diced onion for biriyani gives more taste. tomato should be added half of the amount of added onion as we have added curd while marinating chicken, the sour taste is added there so we should reduce the tomato while adding more onion. Now add the sliced green chilli, here 2 green chilli sliced to 4. add a little salt at this point, here salt helps the onion to turn golden brown a bit faster fry till the onion turns golden brown in color. Now you can notice that the onion has turned to golden brown the onion turning to golden brown adds extra flavor to the biriyani at this stage add the ginger garlic paste Now add minced tomato fry the mixture till the tomato is cooked well now add the minced Mint Leaves now add the minced Cilantro/Coriander Leaves whoever doesn’t wish to get theses leaves while eating, grind theses Coriander Leaves while preparing ginger garlic paste. but if we use the ginger garlic paste which has Coriander Leaves, the whole biriyani looks greener. so better to add Coriander Leaves at this point, at least very little. now tomato has been cooked well now let’s add turmeric powder and red chilli powder we should be adding chilli powder little here as we have already included green chilli and ginger garlic paste. also while marinating chicken we have used chilli powder add according to your spicy requirement garam masala should be added at the end. now the masala is ready let’s add the marinated chicken at this point for biriyani medium size of chicken is mandatory now mix slowly and well now add the basmati rice which has been soaked for 30 minutes. this preparation of chicken biriyani can be served for 4 people for 750 gram chicken i am adding 4 medium size glass of basmati rice mix slowly and well as we are using basmati rice, we should add the ratio of 1:1.50 of water for this mix. be ready with water before this stage now add water add some garam masala please check the level of spice, salt at this stage so that you can add the required at this stage while marinating chicken i have added salt, so now i am adding a little amount of salt. add some Coriander Leaves add some Mint Leaves close the lid now all the preparation is done in high flame now let the whistle blow in the cooker for once. just cook the food till you hear the whistle blow for one time. and later reduce the flame to low and let the chicken biriyani cook for 5 minutes. Whistle blowing now reduce the flame to sim/low level. and let the chicken biriyani cook for 5 minutes Done. now i am shutting the stove off. Completed. 1 whistle in high flame and 5 minutes in sim/low flame. Now wait 10 minutes till the pressure of the cooker has been reduced.
